Biko Espesyal

Biko is very popular in most of Filipinos, best serve together with hot cacao chocolate.

Biko (Rice Pudding)

Recipe Name: Biko

Ingredients

- 2 cups glutinous rice (locals called it "Malagkit rice")
- 1 1and half cups water
- 2 cups brown sugar (locals called it "Kinugay")
- 4 cups coconut milk
- 1/2 tablespoon of salt
- add ginger (optional)

The most exhausting part is the cooking procedures.

COOKING PROCEDURE

1. Combine the sticky rice ("malagkit") and water in a rice cooker and cook.
     - Tips: just put less amout of water than usual so that the rice will not fully cooked though its optional.

2. As you are waiting for the rice to be cooked, use your time and combine the coconut milk with brown sugar and salt in a separate pot and cook in low heat until the texture becomes thick. stir constantly.
    - Tips; This is the most exhausting part, because all you have to do is stir and stir and stir, I recommend if you have a buddy here to help you.

3. When the rice is cooked  and the coconut milk is thick enough, add the cooked rice in the coconut milk sugar mixture then mix it well. After mixing traditionally, they put a leaves of a banana on the top of the cooking container to add more scent. Continue cooking until liquid evaporates. then serve. Enjoy!
